A coffee told slowly, like a moment suspended between dusk and midnight. Grown in the Ethiopian highlands, these whole beans carry a natural anaerobic fermentation that unlocks a rare depth of sweetness and character — the kind that rewards patience.
The cup opens with the warmth of white chocolate, soft and melting, before ripe mango unfolds underneath, lending brightness and freshness. Blackberry closes the experience with a layer of depth that balances the sweetness with a gentle lift of acidity.
Best brewed as filter coffee, where its layered sweetness and clarity have room to fully unfold. Each bag holds 1kg of whole beans, roasted to order and meant to be ground fresh, sip by sip.
Scoring 88–89 points on the specialty scale, this is a coffee made for those who notice the details — meant to be sipped slowly and left to unfold, like cherry blossoms opening under moonlight.

How to Brew — Iced V60
Water: 92°C · Total time: 3:00 minutes
Place 80g of ice in your brewing vessel/server before you start pouring.
Step Starts at Pour to
Bloom 0:00 45ml
Second Pour 0:45 110ml
Third Pour 1:30 180ml
Pour in a slow, circular motion each time. Let the bloom sit until 0:45, then continue with the second and third pours as above, finishing the total brew at 3:00.
Once extraction is complete, gently stir the coffee with the ice to cool and dilute it evenly. Then pour into a glass filled with fresh ice.
If the coffee drains noticeably faster or slower than 3:00, adjust your grind size finer or coarser accordingly.
